A super easy, healthy and delicious curry. I found that I ended up with more sauce than needed for the amount of paneer; this was actually great as meant I had sauce in the fridge for easy weeknight me the next day. It's excellent for poaching fish in.
I used tinned tomatoes, as flavourful fresh tomatoes are hard to come by in Scotland in January. I also have to admit to using a tub of tikka masala spices rather than the exact spices listed in the recipe. Had to increase quantities of seasonings, but that's probably due to the spice mix not being fresh. Once seasoning was adjusted to taste, it was absolutely delicious. 200g paneer polished off between two fairly small people because it was just so moreish!
