Great way to add extra veg to your meal. Leftovers were good too. I had them in chicken wraps and with falafel.
It needs a little more sauce than you think but you want the sauce to be quite reduced because the veg produce a lot of water.
Alao, easy to end up with way more eggplant than the other veg so make sure you get plenty of squash and WAY more tomatoes than you think you'll need.
