The x1 recipe made 34 nuggets of 25g. Next time I'll make them smaller.
The nuggets are very nice, but they're a bit dense, next time I'll try adding potatoes or something inside to make it softer.
I cooked a few, and froze the rest before putting them in the oven, that way I can just get some out of the freezer and put them in the air fryer!
I had some leftovers of the batter, so I would reduce the amount of buttermilk to begin with. Or, I know with actual chicken you can leave it to marinate in the buttermilk and it makes a really tender meat, so we could try leaving the seitan to marinate. Although I'm not sure if it would react the same.
