Amazing. We have 6 people so I tripled it and quadrupled the sauce. I didn’t have the Japanese wine stuff. Mirin I think. I used sushi vinegar instead. Sushi vinegar is 1/4c sugar 1c rice vinegar and a pinch or two of salt. Or you can buy it too.
