Colourful bowl and a great way to get in a bunch of veggies. But I felt like it was lacking something.
- the beets didn't seem to absorb the "marinade". Not sure if I let them sit longer if it would be better
- the edamame could use some seasoning (possibly sesame oil and some sea salt)
The timing is also misleading, as it doesn't account for cooking the beets or the rice that go with this recipe. It took almost 60 min to make this.
