Cooked loosely based off this recipe - used spaghetti instead of rigatoni, and didn't measure the water, i just added a lot of it and then took the extra out with a ladle once the pasta was cooked.
As usual, i added white wine after sauteeing the onions.
I also subbed cream for the coconut milk, and added cottage cheese, feta cheese, and broth powder. It turned out super yummy! Very easy, refreshing lemon flavor, and tastes way creamier than the fat content.
