Way good! If you have never used rice paper before, allow extra time because it can be challenging to get the hang of. I cooked these in the air fryer and served with a side of miso soup.
I would swap the tofu for extra firm and saute it first with some soy sauce (I used coconut aminos), then add the veggies according to the instructions. I followed the recipe this go around, and it still came out delicious. Kid approved!
