Very tasty! Easy to prepare and cook. Used leftover roast chicken from slow cooker chicken the day before. I made my own cauliflower rice rather than using store bought. If you can't get Monterrey Jack cheese, or are budgeting, Woolworths (Australia) sell 250g Spicey Chipotle and Tasty Blend cheese. Used this instead of cheddar and Monterrey Jack - delicious and melted perfectly!
