Definitely do not fry each side of tofu for 10 minutes each on medium heat. just fry on medium/medium-low, turn every 2-3 minutes until all sides are golden brown and crispy. You may need to cook your chickpeas on medium-low/low heat to avoid burning the seasonings. I used brown rice instead of quinoa, added cabbage and peanut sauce. Otherwise, this was very good and will probably join our usual rotation ๐
