Delicious recipe! I seasoned the mushrooms first, and it almost tastes like breakfast sausage in there. The ingredients make the muffins have a complex flavor, which I love. I made it my own, adding a little more eggs (10 total) and veggies so it made 24 muffins in total. I will be using liners next time, however, because the egg residue was a major bother to clean out of the muffin tin. Or perhaps I’ll try to make it in a casserole dish and just slice into pieces.
