I made a few changes and it turned out so good!
- Cooked the rice in veggie broth (as suggested by previous commenter, thank you!)
- Added 1 cup of soy curls (instead of mushrooms) and soaked them in the broth prior to pan frying them
- Added minced garlic, dried parsley flakes and dried rosemary for extra flavour
- Used 2 cups of cashew milk instead of creamer (the extra cup was to make up for losing some broth to the soy curls)
- Added some vegan cheddar shreds to the mixture
Will be making this again!
