This recipe was a success! I followed the instructions almost exactly but I did make some substitutions to make it a bit healthier. I added mushrooms (between onions and chicken) and spinach (stirred in right before the cream/cheese). I used chicken thighs not breasts (personal pref), quinoa not rice, and half and half not cream (it's what we had).
Generally speaking, everything cooked nicely and it had good flavor. If I had one note I would say it was less creamy and more strong parmesan flavor than I expected. If I made it again, I might use a bit more cream (and not half and half) and a little less parmesan. But overall, this was good and easy for a weeknight dinner and I would make it again.
