Very juicy chicken.
A bit salty and the brine gives it a very prominent cooked parsley aftertaste.
The breading isn't special either.
I'm only giving it a thumb up for the brining technique.
Use less salt next time. Definitely ditch the parsley and bay leaves and only use a tiny bit of lemon.
On second thoughts, while fasting, the brine flavors are really overwhelming. I never had hard time reading fried chicken before
