Wow! I turned to this recipe out of desperation when an error at the farmer's market gave me more kale than I knew what to do with. I didn't have high hopes, but I was determined to not waste good veggies. This was a great choice. It's flavorful, with a good balance of zingy and smooth, and likely to become a staple of my spring cooking. In the future, I may top it with some chopped grape tomatoes as well as Parmesan.
