Delicious. This is a hearty, dinner time soup rather than a light lunchtime one. It’s filled with ingredients, and was very much enjoyed by the entire family.
The only change I made was to cook the bacon and chicken together at the beginning, and then use the leftover fat for cooking the peppers and onions. It meant I didn’t have to add much in the way of salt, and helped add a distinct smoky flavour to the soup.
No, it’s not a “healthy” soup, but you can easily switch out the cream for milk and possibly even cut out some of the cheese BUT, as it is written, it’s a filling soup that doesn’t really need a second helping, and is warming for those colder evenings.
The jalapeños added a small amount of kick, though not as much as you might expect. I’m a spice wimp, and found it delicious, but if you prefer a kick, keep the ribs and seeds of one or two of your peppers, or opt for hot peppers instead.
