ABSOLUTELY ADD SALT. I started with a half teaspoon today but I think I'll up it to 3/4 tsp next time and see how that goes. I might also add black pepper.
I didn't really have time today so I also did this in the instant pot; I sauteed the spices, added the chicken and sauteed for 3 minutes, then added the tomatoes and the coconut milk and put it under high pressure for 10 minutes and let it release naturally (and let it stay on warm because I was busy). The chicken was super moist and tender.
But yes, please add salt.
