I...... kind of liked it? I'm not gluten free, I wanted to try this as a vegetarian-going-vegan to kind of increase my protein intake easily. It's a firm bread, but I personally don't mind that. I did undersalt it, so if I make it next time, I'll make sure to add more. It's also a lot harder to eat in one sitting since it's so fibre-ey, it definitely fills you up fast haha. I wouldn't choose this over regular bread, but it ain't half bad.
