We loved this! I used fully-cooked, refrigerated chicken breast strips and cut them into bite-sized pieces but you could do frozen too and just heat them in oil for a few minutes. Used a steamable bag of broccoli that I cooked in the microwave and drained before adding to the big mixing bowl and just cooked the rice on its own. Adds one extra dish but that’s fine. Made the rice as directed (less adding the broccoli) and it was mushy but that wasn’t an issue for our tastes. Easy to fix if you cook the rice a little under what you like. I didn’t add additional seasoning like I normally would and we all had seconds. The topping is amazing. Cheap, easy and pretty quick. Will be a go-to.
