Chicken Broccoli Rice Casserole

Do yourself a favor and get NO SALT cream of chicken soup. There's plenty of salt in all the other ingredients and you can always add more as needed.

Do not stir to much. The brocolli wil become mushy.

It was good but not very flavourful. Makes good bulk meals though. I 1.5 the recipie and it made for 2 dinners and 2 lunches for us

I added Kinder's herb and garlic seasoning, and it was a hit with the family. I will be making it again and adding this dish to the dinner rotation.

Added some Adobo seasoning as well to add some more flavor - tasted delicious! For the topping, I used Extra Toasty Cheese-Itz instead of Ritz, and it was a good substitute!

Can substitute canned chicken and add other veggies like corn

This recipe was SO bland, even with the "optional seasonings" (which are absolutely necessary). Such a disappointment.

We loved this! I used fully-cooked, refrigerated chicken breast strips and cut them into bite-sized pieces but you could do frozen too and just heat them in oil for a few minutes. Used a steamable bag of broccoli that I cooked in the microwave and drained before adding to the big mixing bowl and just cooked the rice on its own. Adds one extra dish but that’s fine. Made the rice as directed (less adding the broccoli) and it was mushy but that wasn’t an issue for our tastes. Easy to fix if you cook the rice a little under what you like. I didn’t add additional seasoning like I normally would and we all had seconds. The topping is amazing. Cheap, easy and pretty quick. Will be a go-to.

Bland boring and horrible.

This was super yummy. Rice cooked perfect and tasted so creamy and cheesy. Delish.

I shredded my chicken but for next time, I’ll definitely cube it. And I used 4 Cups of frozen broccoli. Seasoned with my heart.

Turned out well. Nothing to scream and yell about but it was delicious. Everyone enjoyed it. I followed it almost down to the letter. I substituted plain Greek yogurt in for the sour cream. I also added an extra chicken breast and it was good. I think I will change up the seasonings. The thyme wasn’t my favorite. It does take awhile compared to other rice casseroles. Took me about 90 minutes from start to finish.

Double for freezer

Didn't enjoy this. Too mushy and bland. Also more prep than I want to do for a casserole.

Adding parmesan cheese on top significantly improved the recipe. Thyme was a little intense, and I think a different but more aggressive seasoning blend would have been better (to be fair, I used shredded chicken cooked in the Instant Pot, not the prep method suggested in the recipe). Still a great starting point for a good casserole!

Fantastic casserole. One of the best I’ve eaten. I followed the directions exactly, several steps but totally worth it. Yum! Will be a regular recipe at our house.
