I used this as a base. Substituted what I had on hand:
-Two chia seed eggs (2tbsp chia seeds, 6tbsp hot water)
-soy milk with three overnight soaked dates
-no sugar
-vanilla extract
-olive oil
-cooked in plant based butter
These were some next level blueberry pancakes. Fluffy, soaked up maple syrup beautifully and retained fluff even when soaked through.
I made 5 large pancakes and still have nearly 4 cups of batter left for tomorrow. (😭🙏🏼🥞✨)
The recipe as is doesn’t call for enough liquid for me, so I adjusted and added water until it was the consistency I was looking for.
