Very good muffins. It doesn't mention it but melt your butter first, there's no creaming step so you'll get butter chunks if you don't. Its a flexible recipe, I subbed 1/2 the flour for whole wheat and added ground flaxseed and it still came out moist and tender. If your not using the full amount of very, very ripe and sweet bananas and sweetened almond milk, you will probably need to add bit of sweetener. I recommend adding the crumb topping and I added oats and almonds to get some more whole grains and omega 3s in.
