Instructions
Step 1
In a large bowl mash the banana until it becomes a purée
Step 2
Add in the maple syrup, vanilla, milk, butter and egg
Step 3
Whisk until combined
Step 4
Sift in the flour, protein powder, baking soda and cinnamon
Step 5
Mix and get rid of any lumps
Step 6
Divide mixture into 7 large muffin cases (makes 12 regular cupcakes)
Step 7
Add topping of choice (i used crumble - 40g flour, 1tbs sweetener, cinnamon and 15g cold low fat butter)
Step 8
Bake at 180C for 15-20 mins
Step 9
(Optional) after baked pour almond milk over the muffins and leave it to soak in (helps them stay moist)

For anyone woondering, 300g banana I interpreted as without peel and it turns out to about 2 and a half bananas.
Pretty good recipe. I'd add a bit more truvia next time though.
I put some blueberries in half of them (I made 10 as I didn't have big muffin cases) and I liked that a lot once cooled. The ones without blueberries also tastes nice, though next time I make them I'd add some banana slices, to really bring out the banana flavour.
