I made a modified version. Mine is more a stew than soup. Lots of onions sautéed in water. When they were mostly cooked, I added sun dried tomatoes that are packed in olive oil, so got a little oil in. Added Italian spices and kale. Added one can of organic tomato sauce and one can organic crushed tomatoes. Cooked for about 25 minutes until the kale was well wilted, then added 4 cups of organic garbanzo beans that I had cooked earlier. Let it sit for a bit so the beans could soak up some of the sauce. Really yummy. Sprinkle nutritional yeast on top and good to go. Will serve with grains.
