So, if you want to know what this is like straight out of the oven and into the fridge only an hour, read on. My guests graciously complimented the creaminess of the cheesecake. The texture wasn't like I expect a classic baked cheesecake. Not as dense and smooth. Flavors were subtle and not super sweet, which many people appreciate. We all liked it well enough, but I wouldn't say it was the BEST. That may not be fair since we ate it without the overnight refrigeration.
