This was delicious! I made some changes (all of which were suggested under "Variations"). I used ground beef, Hoisin sauce instead of the oyster sauce (left out the sugar in the sauce) and added carrots and red peppers to the vegetables. Next time I will add just a hint of sriracha.
Husband loved it - but he loves everything that I serve on rice. I also loved it - maybe because it was the easiest meal I have made in a while.......over all, very good.
