Do not try to optimise by steaming the veggies using the boiling water for lentils. Cook them separately.
Some learnings:
* Don't steam the veggies, but better boil them, together with the garlic and ginger: might add already some flavour to the veggies.
* Boil the lentils independently from the veggies (not together, not profiting it's boiling water to steam the veggies).
* If not making the purée version, to make the "sauce" for the veggies blend the apple vinegar, lime juice, cumin, garlic and ginger.
* No need for salt, the "sauce" is tasty enough!
* However, on the pure version it is easier to mix the "sauce". Else, in full pieces of veggies, it is more difficult to mix and make sure everything has a bit of sauce to give taste to everything equally.
* As mentioned in the recipe, some water from boiling the veggies will be needed for the purée version, so do not throw the water away, since that water has lots of vitamins and flavour as well (and else the purée will be way too thick).
* With the given amounts of ingredients: Lots of food!! (even if it is supposed to be for 1 serving only).
* It is indeed a lot of food!! So much veggies!... Maybe another point in favour of the purée version, since maybe it is easier to eat.
* Purée version seems to be better and a bit more tasty.
