I made this today and it took a while but it's tasty! I accidentally oversalted my soup so go easy on the salt because both the bacon and the broth are salted and the 2 hour cook time boils off the water and makes the flavors concentrated. I used vegan bacon and a vegetable broth (10 cups water and 5 veggie bouillon cubes). It definitely made more than 4 servings, more like 4 huge servings or 5 regular bowls. I bet it would be good with diced potatoes added to it.
edit: 1/2 package or 7 slices Lightlife vegan bacon is the perfect amount, omit the salt completely - I left it out this time. Maybe 3 or less bouillon cubes next time.
