Pea Soup - Elder Scrolls

Nothing wards off the winter's chill like a nice, hearty soup. This is a popular option in the depths of winter, when fresh greens are harder to come by, but it still incorporates some of Skyrim's most popular ingredients as it uses dried peas and cured bacon, along with carefully stored leeks and carrots. Instructions

Step 1
I.Soak the split peas in 6 cups of water overnight. 2. When you're ready to make the soup, drain the water from the peas and add them to a large soup pot along with the broth Set over medium heat and allow to simmer for about 90 minutes, until peas have begun to soften. 3. While the peas are cooking, warm the olive oil in a medium sauté pan or skillet, and sauté the carrots and leeks for several minutes until they've started to soften. Remove from the heat and set aside. 4. Also while the peas simmer, in a large sauté pan or skillet, cook the bacon-the crunchier the better. 5. After the peas have cooked, add the carrots, leeks, and most of the bacon to the pot, reserving some bacon as a topping. Season to taste with pepper and add the marjoram. Cook for 1 hour more, stiring once in a while, and adding more broth if needed. The soup is ready when the peas bave fallen apart and are completely soft.
Step 2
Can use 6-8 vegan bacon slices. Soak peas overnight at room temperature, discard pea water before cooking.
Step 3
Makes 4 large servings.
