the end result was delicious, very fluffy and easily folded into wraps/kebabs
however the actual baking was a bit chaotic (the oven temperature was too hot for my oven and the baking paper caught fire within seconds of baking, I used aluminium foil instead) and flipping the pita turned out to be impossible without tearing the bread with the tongs. thankfully the pita baked just as well when I didn’t flip and just baked for 3min
