This was really good! Even before all the ingredients were in. I’ll definitely make this again. I’m not the biggest fan of lentils normally, but this is done right imo.
I added just 1 Tbsp of lemon juice, and it was so good I didn’t want to ruin it by adding too much. I tried upping it to 1.5 Tbsp, I think it was better with just 1 next time.
The downside was it took twice as long to cook the potatoes and lentils as specified. And I kept needing to add water - used >2 cups in total. I’m at 4000 ft elevation though, which may be part of it.
