This was really good. I made a few changes. I added garlic and diced onion (no longer low fodmap), and used 1/2 cup fire roasted diced tomatoes instead of the tomato it called for. The rice was slightly mushy even though I rinsed it. Next time, I'll add 1/2 cup less chicken broth. Also, the breasts were a little dry by the time the rice was finished cooking. Next time, I'll use boneless thighs and I think it will be perfect.
