Sometimes it's hard to find loose leeks, so a mild white onion, a small bunch of scallions, or some shallots will work just fine.
One of my clients always asks that I use up what she has in her pantry, and a can or two of mixed veg usually has corn, beans, carrots and peas.
The fresh lemon juice adds a nice touch of acidity.
Seasoned croutons or fresh buttered Italian or French bread rounds out the meal.
