This was quite tasty! The brown rice made it feel really hearty. As per other suggestions, we added taco seasoning. We had it three dinners in a row, and ate it with chips. It’s pretty easy to make, you just need to plan ahead because you have to cook the brown rice ahead of time, which takes a while, and then of course bake the casserole as well. Most of the time though is hands off. We cooked the rice Lee the bag instructions, give a 1:1.5 rice to water ratio. So we just rounded to 1 full cup of rice to avoid the fraction 9/8 cups of water 😅
