Delicious, quick and easy for a weeknight dinner. It was easy to increase the amount so we had leftovers for lunches the next day. We will add the seasoning blend to the peppers and onions next time. We made it with cilantro instead of basil and we loved it. We even added cilantro to the rice. This will definitely be a go-to supper for us or I may meal prep it for lunches throughout the week.
