Made the chicken part in the air fryer. Each batch of chicken I cooked at 390 to 400 f for about 30 minutes. Dredged some batches in potato starch and some in cornstarch and basted with coconut oil. Put the juices in the pan on the stove top for cooking the aromatics and jalapeno. This recipe took me a long time because I cooked it in the air fryer and batches. I made some brown basmati rice with coconut oil, dried cranberries, and golden raisins to offset any spiciness for the others in my family who don't like spicy things.
