I made a double batch and used 6 cups rice.
While the rice was cooking, I browned the turkey with the onions and spices, then set it aside. Then, I put the pan back on the heat, added the oils, and cooked the carrots until they were crisp-tender, then added the rice and browned it before adding the soy sauce. Once that was all mixed, I added the eggs, and finally the peas. I kept the turkey on the side so people could dish up their own amounts.
