I used this more as inspiration than anything else and converted to an Italian versus Mexican concept. I had some tomato basil marinated chicken I used. Kept the oregano and used Italian seasoning instead of the cumin and paprika. I did add 1/4 tsp. cayenne for a little kick. Instead of cheddar used Shredded Italian blend and also Shredded up about 1/4 cup Asiago cheese. Made with homemade garlic bread and it was delicious. Whole family liked it and that is always a win!
