Definitely don't want to under season this one. I doubled the recipe and it made for good leftovers. I used Thai chilis de-seeded but still kept it at two even though I doubled the rest of the ingredients. That was a good level of spice once I'd removed the chilis, could feel it but it didn't burn your face off. Also, adding some Greek yogurt or sour cream to serve at the end really helped balance the dish since it was missing a bit of richness.
