THIS WAS THE PERFECT QUICK & DELICIOUS MEAL (I added a few notes / sides below for next time we make it)
I made the sauce before hand. Mixing all ingredients (and a couple bay leaves) in a bowl then added the chicken pieces to let marinate in the fridge for around 30-60 minutes (will try longer next time). Cooked the chicken as shown and let simmer in the sauce for 15-20 minutes to finish cooking.
Serve with:
Cabbage / Red onion slaw
- cabbage, red onion, mayo, white wine vinegar, honey, salt, pepper
White rice
- seasoned with garlic powder, onion powder, rosemary, thyme, white pepper, small pinch of saffron
