Made the full recipe of risotto, but only made about 12 arancini, so I have a few good portions of risotto in the freezer (oh no, how terrible!).
These were really nice, but I think they need more seasoning than you think is right when it's just risotto to make the arancini really tasty. Possibly more garlic also, but we're garlic fiends.
They were a total nibbly success though! Will definitely make again and tweak.
