Enjoyed with enthusiasm by all! I used canned hominy and because I only had one tomato went with a large can of diced tomatoes nevertheless it all turned out really well. I also made the coconut rice from the same website which didn’t taste all that coconutty to ,e but was still nice. I will definitely make this again!
