It's very tasty, if a bit time consuming! Could save time to use a frozen peas and carrots mix. The fresh carrots I used were a little too crunchy for my preference but added some texture which may be preferable to some. My blender had a hard time making the sauce creamy when I mixed all the water right away with the cashews. If I do it again, I'll add less water until I get the cashews full blended and then add the rest of the water. That being said, it didn't ruin the dish but it definitely wasn't as creamy as would be ideal. Had to add some shredded cheese to get the creaminess I was looking for in texture. Topped with Sriracha and green onion instead of parsley.
