Creamy Vegetable Pie with Potato Gems (Tater Tot Hot Dish)

Like a creamy chicken pot pie but topped with potato gems (or tater tots as they say in the US!) I like to airfry my potato gems first so they're already half cooked and get extra crunchy in the oven. A super delicious and crowd-pleasing dinner. Recommend serving with my sesame kale caesar salad!

Ingredients

SAUCE
1 cuproasted cashews
soaked in boiling water for at least 1 hr
1 ½ cupswater
⅓ cupnutritional yeast
1 TbspBouillon Powder
+ 1.5 tsp
0.5lemon juice only
1 Tbspapple cider vinegar
1 Tbspdijon mustard
½ tspblack pepper
1 tsponion powder
½ tspgarlic powder
FILLING
1Onion
fine diced
2 clovesGarlic
fine diced
1 tspdried thyme
1 tspdried rosemary
¼ tspdried sage
0.5 stalkCelery
fine diced
1.5carrot
fine diced
1 cupfrozen peas
1can chickpeas
drained and rinsed
½ cupcorn kernels
parsley
salt
to taste

Instructions
Step 1
In a high speed blender, blend all sauce ingredients together until very very smooth. Chop all your bits for the filling (onion, carrot etc)
Step 2
Preheat oven to 190ºC. Meanwhile, airfry tater-tots (enough to cover whatever casserole dish you want to use) for 10 minutes so that they are already halfway cooked before we top our pie. We want them to be extra crispy!!
Step 3
Heat 2 tbsp of oil in a large pot on medium heat. Fry off onions, garlic, celery and carrot for 4-5 minutes or until onions go a little translucent and everything starts smelling real yum.
Step 4
Add rosemary, thyme and sage and stir for 1-2 minutes to release some of those herbacious flavours! Add in your chickpeas and corn and stir for another 1-2 mins then turn the heat to low.
Step 5
Pour in the blended cashew cream and peas and continually stir for just a few minutes until the cream starts to thicken slightly. In a small bowl mix together the cornstarch and water to form a slurry and add to the pot and stir through. You can add a little water to the pot if you feel it's getting too thick. Turn heat off then stir in the handful of parsley.
Step 6
Transfer the creamy pie mixture into a casserole dish of your choice. Top immediately with tater tots and place straight into the oven for about 20 minutes or until tater tots are deeply golden brown! Serve immediately! (Recommend serving with my sesame kale caesar salad - it goes so well) and enjoy!!
