This turned out pretty good! I'm vegetarian so I subbed the ground sausage for a meatless Italian sausage from Trader Joe's. Additionally we added an extra can of beans just because we had it on hand and wanted a bit more. Neither of us were a big fan of the coconut milk in this, the white bean soup recipe we are used to doesn't have any kind of creaminess to it, so this wasn't really our vibe. I think next time I will fully omit the coconut milk from this recipe. It was also a bit spicier than expected, but not too spicy. Otherwise it turned out lovely and we served it with cornbread!
