I was supposed to make Avocado fresh pasta but my avocados were still unripe so I checked this recipe as an alternative. I didn’t have Tomato Passata so I just blendered canned diced tomatoes then let it get reduced to thicken to have makeshift tomato paste (as it’s the alternative I saw on articles). I also used local tomatoes since I don’t have easy access to cherry tomatoes. I shaped my pasta similar to the avocado fresh pasta because I thought it was cuter (haha). Overall, I liked the chewy pasta (10-12 of it was enough to make me full), my mom liked the sauce I made. (I forgot to put cheese but next time I will!!) There’s still room for improvement since it’s my first time making pasta from scratch. Once I have ripe avocados, I’ll try the avocado fresh pasta.
