Cooked the white rice in the instant pot. Added the cooked onions and thawed frozen broccoli when rice was cooked. Replaced the lid for another 10 minutes. Mixed all ingredients as per recipe, and baked covered for 30 minutes then 15 uncovered until nicely browned. Very good.
NOTE, I used 1/2 C GF panko mixed with 2 TBLN melted butter instead of Ritz crackers for the topping
