I made this for my husband and me so I only used one chicken breast. I pretty much used 1/2 the amount of filling, but it was the perfect amount. I made it ahead of time and stuffed the chicken breast and wrapped it real tight with plastic wrap and refrigerated it until it was time to bake. No toothpick necessary! I skipped the searing part and just baked it for about 25 minutes, like others had done.
This was an easy, tasty dinner and will be a go-to!
