Absolutely love this and keep us in the rotation. My only note on the instructions is to watch out for overcooking during that first 25 minute stretch of baking. I had two pork loins and one was small and one was large and unfortunately, the small one overcooked during the first 25 minutes, in fact, the second one was perfectly cooked after the first 25 minutes and I didn’t need to continue cooking at all. I love the spice rub and honey flavors and it was really good with green beans and butternut squash dishes.
