I substituted whole wheat flour and almond flour. Ratio 2/3 of recommended flour was whole wheat an 1/3 recommended flour amount was almond. Also, in my experience with vegan baking, you need to have acid to offset heavy overtones of baking powder, baking soda flavor. So I added one teaspoon apple cider vinegar to the bananas before adding to the dry ingredients. This will accelerate chemical reaction. You will need to put in muffin tins and bake then soon after you mix all ingredients together.
Gluten-free option:
Substitute King Arthur Gluten Free All Purpose Baking Mix for 1 cup plus 2 T
1 scoop pea protein powder
½ c almond flour
Additionally add 1t. vinegar to milk
Added: ½ c oat milk and ⅓ c chopped walnuts
