For anyone not familiar with it l, the "skyr" is an Icelandic dairy product similar to yogurt, but milder. It is often just called Icelandic yogurt. There are a couple of brands to be found in San Diego stores, but I have no idea how easy it is to find elsewhere. Probably plain yogurt would work, although it would change the flavor profile somewhat.
